The Brewhouse

This is our brewhouse! You won’t see another like it. In fact, there hasn’t been a brewhouse of this caliber built in the last twenty years. Notice the beauty of the shiny copper cookers.

The grist is added to the two vessels in the foreground. The one on the left is the Cereal Cooker, and the large one on the right is the Mash Vessel. In the Cereal Cooker we combine and cook cereal, barley malt and pure water. When the mixture in the Cereal Cooker reaches the boiling point it is transferred to the Mash Vessel where the cooking is completed. The purpose of the two vessels is to get the flavor from the grains and to convert the starches to sugars.

Once the conversion has taken place, we move it into the Lauter Tun (center). In the Lauter Tun, we separate the grain from the liquid through a false bottom like a sieve. The grain settles to the bottom and acts as a natural filtering agent. At this stage the liquid is called “Wort.” Wort in German means the “roots” or “beginnings.” It is not worthy of the title “beer” until it has fermented.
